Buckwheat Zaru Soba

A quick breakfast out of boredom: smooth buckwheat noodle with a dash of umami bomb sauce.

INGREDIENTS

  • Soba noodles
  • Mirin
  • Soy sauce
  • Sake
  • Kelp
  • Seaweed (nori)
  • Shaved fish (katsuoboshi)

STEPS

  1. Prepare noodle according to package (put in boiling water, bring to boil, set to low, leave for 3 minutes, drain and rinse with cold water)
  2. In a sauce pan, add all the remaining ingredients except the last two and bring to boil
  3. Turn the heat off and add the last two ingredients then strain
